Energy-dense, nutrient-poor foods, otherwise known as junk foods, have never been more accessible and available. Young people are bombarded with unhealthy junk-food choices daily, and this can lead to life-long dietary habits that are difficult to undo. In this article, we explore the scientific evidence behind both the short-term and long-term impacts of junk food consumption on our health.

Introduction

The world is currently facing an obesity epidemic, which puts people at risk for chronic diseases like heart disease and diabetes. Junk food can contribute to obesity and yet it is becoming a part of our everyday lives because of our fast-paced lifestyles. Life can be jam-packed when you are juggling school, sport, and hanging with friends and family! Junk food companies make food convenient, tasty, and affordable, so it has largely replaced preparing and eating healthy homemade meals. Junk foods include foods like burgers, fried chicken, and pizza from fast-food restaurants, as well as packaged foods like chips, biscuits, and ice-cream, sugar-sweetened beverages like soda, fatty meats like bacon, sugary cereals, and frozen ready meals like lasagne. These are typically highly processed foods , meaning several steps were involved in making the food, with a focus on making them tasty and thus easy to overeat. Unfortunately, junk foods provide lots of calories and energy, but little of the vital nutrients our bodies need to grow and be healthy, like proteins, vitamins, minerals, and fiber. Australian teenagers aged 14–18 years get more than 40% of their daily energy from these types of foods, which is concerning [ 1 ]. Junk foods are also known as discretionary foods , which means they are “not needed to meet nutrient requirements and do not belong to the five food groups” [ 2 ]. According to the dietary guidelines of Australian and many other countries, these five food groups are grains and cereals, vegetables and legumes, fruits, dairy and dairy alternatives, and meat and meat alternatives.

Young people are often the targets of sneaky advertising tactics by junk food companies, which show our heroes and icons promoting junk foods. In Australia, cricket, one of our favorite sports, is sponsored by a big fast-food brand. Elite athletes like cricket players are not fuelling their bodies with fried chicken, burgers, and fries! A study showed that adolescents aged 12–17 years view over 14.4 million food advertisements in a single year on popular websites, with cakes, cookies, and ice cream being the most frequently advertised products [ 3 ]. Another study examining YouTube videos popular amongst children reported that 38% of all ads involved a food or beverage and 56% of those food ads were for junk foods [ 4 ].

What Happens to Our Bodies Shortly After We Eat Junk Foods?

Food is made up of three major nutrients: carbohydrates, proteins, and fats. There are also vitamins and minerals in food that support good health, growth, and development. Getting the proper nutrition is very important during our teenage years. However, when we eat junk foods, we are consuming high amounts of carbohydrates, proteins, and fats, which are quickly absorbed by the body.

Let us take the example of eating a hamburger. A burger typically contains carbohydrates from the bun, proteins and fats from the beef patty, and fats from the cheese and sauce. On average, a burger from a fast-food chain contains 36–40% of your daily energy needs and this does not account for any chips or drinks consumed with it ( Figure 1 ). This is a large amount of food for the body to digest—not good if you are about to hit the cricket pitch!

  • The carbohydrates of a burger are mainly from the bun, while the protein comes from the beef patty. Large amounts of fat come from the cheese and sauce. Based on the Australian dietary guidelines, just one burger can be 36% of the recommended daily energy intake for teenage boys aged 12–15 years and 40% of the recommendations for teenage girls 12–15 years.

A few hours to a few days after eating rich, heavy foods such as a burger, unpleasant symptoms like tiredness, poor sleep, and even hunger can result ( Figure 2 ). Rather than providing an energy boost, junk foods can lead to a lack of energy. For a short time, sugar (a type of carbohydrate) makes people feel energized, happy, and upbeat as it is used by the body for energy. However, refined sugar , which is the type of sugar commonly found in junk foods, leads to a quick drop in blood sugar levels because it is digested quickly by the body. This can lead tiredness and cravings [ 5 ].

  • In the short-term, junk foods can make you feel tired, bloated, and unable to concentrate. Long-term, junk foods can lead to tooth decay and poor bowel habits. Junk foods can also lead to obesity and associated diseases such as heart disease. When junk foods are regularly consumed over long periods of time, the damages and complications to health are increasingly costly.

Fiber is a good carbohydrate commonly found in vegetables, fruits, barley, legumes, nuts, and seeds—foods from the five food groups. Fiber not only keeps the digestive system healthy, but also slows the stomach’s emptying process, keeping us feeling full for longer. Junk foods tend to lack fiber, so when we eat them, we notice decreasing energy and increasing hunger sooner.

Foods such as walnuts, berries, tuna, and green veggies can boost concentration levels. This is particularly important for young minds who are doing lots of schoolwork. These foods are what most elite athletes are eating! On the other hand, eating junk foods can lead to poor concentration. Eating junk foods can lead to swelling in the part of the brain that has a major role in memory. A study performed in humans showed that eating an unhealthy breakfast high in fat and sugar for 4 days in a row caused disruptions to the learning and memory parts of the brain [ 6 ].

Long-Term Impacts of Junk Foods

If we eat mostly junk foods over many weeks, months, or years, there can be several long-term impacts on health ( Figure 2 ). For example, high saturated fat intake is strongly linked with high levels of bad cholesterol in the blood, which can be a sign of heart disease. Respected research studies found that young people who eat only small amounts of saturated fat have lower total cholesterol levels [ 7 ].

Frequent consumption of junk foods can also increase the risk of diseases such as hypertension and stroke. Hypertension is also known as high blood pressure and a stroke is damage to the brain from reduced blood supply, which prevents the brain from receiving the oxygen and nutrients it needs to survive. Hypertension and stroke can occur because of the high amounts of cholesterol and salt in junk foods.

Furthermore, junk foods can trigger the “happy hormone,” dopamine , to be released in the brain, making us feel good when we eat these foods. This can lead us to wanting more junk food to get that same happy feeling again [ 8 ]. Other long-term effects of eating too much junk food include tooth decay and constipation. Soft drinks, for instance, can cause tooth decay due to high amounts of sugar and acid that can wear down the protective tooth enamel. Junk foods are typically low in fiber too, which has negative consequences for gut health in the long term. Fiber forms the bulk of our poop and without it, it can be hard to poop!

Tips for Being Healthy

One way to figure out whether a food is a junk food is to think about how processed it is. When we think of foods in their whole and original forms, like a fresh tomato, a grain of rice, or milk squeezed from a cow, we can then start to imagine how many steps are involved to transform that whole food into something that is ready-to-eat, tasty, convenient, and has a long shelf life.

For teenagers 13–14 years old, the recommended daily energy intake is 8,200–9,900 kJ/day or 1,960 kcal-2,370 kcal/day for boys and 7,400–8,200 kJ/day or 1,770–1,960 kcal for girls, according to the Australian dietary guidelines. Of course, the more physically active you are, the higher your energy needs. Remember that junk foods are okay to eat occasionally, but they should not make up more than 10% of your daily energy intake. In a day, this may be a simple treat such as a small muffin or a few squares of chocolate. On a weekly basis, this might mean no more than two fast-food meals per week. The remaining 90% of food eaten should be from the five food groups.

In conclusion, we know that junk foods are tasty, affordable, and convenient. This makes it hard to limit the amount of junk food we eat. However, if junk foods become a staple of our diets, there can be negative impacts on our health. We should aim for high-fiber foods such as whole grains, vegetables, and fruits; meals that have moderate amounts of sugar and salt; and calcium-rich and iron-rich foods. Healthy foods help to build strong bodies and brains. Limiting junk food intake can happen on an individual level, based on our food choices, or through government policies and health-promotion strategies. We need governments to stop junk food companies from advertising to young people, and we need their help to replace junk food restaurants with more healthy options. Researchers can focus on education and health promotion around healthy food options and can work with young people to develop solutions. If we all work together, we can help young people across the world to make food choices that will improve their short and long-term health.

There is no better way to handle craving than planning your snacks and meals ahead of time. If you have healthy snacks and meal packed and ready for you in afternoon and lunchtime, you are far less grab the leftover piece of pizza, sweets, or French fries someone brought to your workplace.

4. Eat Enough Protein

Protein makes one feel full like macronutrients such as carbs. So, it is wise to fill your diet with healthy sources of protein that include nuts, vegetables, beans, and fish. So, when you are full, there is less room and less desire for junk foods.

This type of food is also popular among consumers because of their ease to the time of acquiring it, does not require any type of preparation or this is scarce, it is comfortable to eat and have a great diversity of flavors.” A part of all the criticism about this type of food there is a strong increase in its consumption due to several factors related to the day-to-day activities of a society in which time is short and don t give importance to food and prefer concentrate all our time at work or studies. This type of food is very tasty, tasty and even addictive is also available to all, there are typically many establishments where you can buy, and the majority have home delivery. The advertising of this type of food is everywhere, it has become fashionable and a lot of people for the sake of convenience the has among its favorite. There are many examples of junk food such as pizzas such as hot dogs, french fries, some sweet, sweet, some refreshments but the maximum exponent or with that relates the junk food is the menus a hamburger bun with french fries and carbonated soft drink. A group of scientists from Australia carried out a study with two groups of rats. The rats were offered two types of water with two different flavors, each accompanied with a different sound.

Throughout the experiment – which lasted two weeks, the rats with healthy diet began to ignore the signs of the water if you have recently had already drunk the flavor that offered them. This is the normal behavior: eating or drinking more of the same would be excessive.

On the other hand, the group with the unhealthy ration not noticeable difference and drank the water every time he wanted possibility without differentiating the flavors, leading to excessive consumption.

What is amazing is that after you return to a healthy diet the second group of rats did not change their behavior, what would be a lasting nature of the food habits caused by junk food. The scientists believe that the outcome of the study deserves a detailed investigation and intended to repeat the experiment with a longer term.

Often when we talk about or hear the term “fat” automatically think of terms such as obesity, cholesterol, fat, poor health… however perhaps there are some things about fats that do not know and that you must take into account the time to follow a healthy diet, since not all fats are bad and, in addition, fats are absolutely necessary for our body.

Fats, along with the carbohydrates and proteins, they are the three basic nutrients that our body needs to stay alive and with energy. We cannot live apart from any of these three macronutrients, therefore you must know that the fat, in its fair measure, are very healthy.

In addition, as carbohydrates are not all equal (see our article about carbohydrates and glycemic index), fats are not all equal. You can distinguish up to three different types:

Saturated fats: These fats are “bad”, which you should avoid at all costs. Well, not how to avoid both, but if you moderate your intake. These fats usually come from foods of animal origin, such as meat, eggs or milk.

Unsaturated: These are the most healthy and help regulate our cholesterol level. Can be found in foods such as soy milk, vegetables, or fish, and is highly recommended prioritize the intake of these fats before that the saturated.

Polyunsaturated fats: These you should also try to avoid them as they are saturated.

Well, now that you know which types of fats are good, we are going to recommend a number of foods that contain unsaturated fats instead of saturated and that, therefore, you must prioritize these in your diet such as dried fruits, mainly walnuts and hazelnuts.

This also includes fish such as salmon or the blue fish. The salmon is a fish that, although it contains many fats, these are unsaturated, so they are healthy. The fat of the fish is, primarily, the well-known omega 3.

The soy milk, in addition to having all the benefits of milk and do not have lactose, has a significant amount of healthy fats.

Sugar can increase the risk of deficiencies in the B vitamins. Dental Caries: it is known that foods rich in sugars are the basic substrate of the cariogenic bacteria, therefore, an excessive consumption of substrate will increase the likelihood of having dental and oral diseases such as caries.

Increased risk of acne: people who are prone to acne should know that the great release of insulin which causes consume simple sugars in excess, it can mean a resurgence of acne, therefore, this is another of the negative effects of eating sugar in excess.

Of course, the negative effects of excessive consumption of sugar go beyond calories and this has been demonstrated recently. In addition, we cannot fail to say that the more calories without micronutrients that represents eating sugars in excess may mean obesity. That is to say, beyond the calories and the risk of being overweight, we should all take care of the consumption of sugar if you want to benefit the health with diet and not harm it with what we eat.

Usually associate the fats to a poor health or a type of nutrient harmful for our body, and is not as well. Fats along with carbohydrates are one of the main sources of energy in our body, which makes them essential in our diet, and we must consume moderately.

To begin we’ll start with the healthy fats. Are those that belong to the group of the unsaturated. Fats are in a pure state it is say, no other agency has transformed previously, which is why they are available to our body in order to be processed to your whim and exploited to the maximum. This type of fat found in plant foods such as olive oil or virgin olive oil on the fish at the in the form of omega 3. Regular consumption is essential for the proper functioning of our body.

A diet rich in this type of unsaturated fatty acids will help us to prevent diseases such as cardiovascular disease, because its depurative properties of the blood have the function to reduce the level of cholesterol and triglycerides in the blood, with what our blood pressure will be reduced, and with it the risk of stroke. In addition, they help to regulate our body disorders such as avoiding obesity…

On the other hand we have the saturated fats, which are also essential for the proper functioning of our body, but their consumption should be very limited. This type of fat found in meat, coconut and palm oil, widely used in the industrial bakery and industrially processed foods. A regular intake of this type of food will lead to increased cholesterol, reducing the body’s ability to subdue him, which leads to an increase in cardiovascular diseases as well as an imbalance in our body.

For all these reasons we must consume mainly unsaturated fats that we will provide the health and welfare necessary for our body, as well as the energy that we require for the proper functioning of the body. It is the processed foods that contain the artificial chemicals that can harm our body.

Eat for Life: The Food and Nutrition Board's Guide to Reducing Your Risk of Chronic Disease (1992)

The foods you choose to eat can have a direct impact on your ability to enjoy life to its fullest. Perhaps the most obvious positive effect of food is the pleasurable feeling you get from eating a good-tasting meal. It might be a plate of grilled chicken, corn-on-the-cob, fresh vine-ripened tomatoes, and a baked potato, or a steaming dish of spaghetti topped with a zesty tomato sauce.

Your diet can have long-term effects on your health as well. Diet plays a major role in promoting and maintaining good health, preventing some chronic diseases and treating others, and speeding recovery from injuries. In earlier times, diseases such as goiter and pellagra were relatively common—both are caused by nutritional deficiencies and cured by diets containing sufficient amounts of a particular nutrient. In the case of goiter, iodine is the missing nutrient; with pellagra it is mainly niacin, a B vitamin. These diseases are rare today in the United States because most Americans get enough of these essential nutrients in their diets.

Although it is unlikely that you or your family will ever suffer from an illness caused by pronounced dietary deficiency, the foods you eat can exert more subtle and, in the long run, no less harmful effects on your health. During the past few decades, scientists have identified several dietary factors that play important roles in the development of specific diseases. Diets high in certain types of fat, for example, appear to increase the risk of developing coronary heart disease and certain cancers, and, among susceptible people, too much salt in food is believed to increase the chances of developing hypertension (high blood pressure). Other scientific evidence suggests that the current average American diet—which is high in fatty foods and low in fruits and vegetables—can increase the risk of developing certain forms of cancer, especially cancers of the esophagus, colon (large bowel), prostate, and breast. Certain dietary patterns can increase the likelihood of dental caries (cavities). In addition, habitually eating more calories than the body uses for maintenance and physical activity produces obesity and increases the risk of several chronic diseases including noninsulin-dependent diabetes mellitus, a form of diabetes that does not usually require daily insulin injections but has many adverse complications and generally appears after age 40.

As the body of research on diet-disease connections has grown over the past half century, scientists, policymakers, officials of the food industry, consumer groups, and others have engaged in a debate about how much and what kind of evidence justifies giving dietary advice to the public. They have also argued about how best to control risk factors on which there is general agreement among scientists.

The central problem in this debate is one that characterizes all science: absolute proof is difficult to obtain. This is particularly true in a science such as nutrition, in which many factors—age, sex, genetics, social behavior, and cultural differences, for example—can play a role in what food we eat and how it affects our bodies.

Nevertheless, the strength of the evidence, the severity of the risk, and the ability of people to make informed choices can be used as a foundation for making public policy decisions on diet and health. Public information and education programs may be appropriate in some cases, and government regulation in others. For example, it might be sufficient to educate people against the potential hazard of eating too much fatty food, but the cancer-causing potential of aflatoxin (a toxin produced by a mold that grows on food) and the fact that it cannot be seen in food warrant government regulation to curtail aflatoxin contamination of peanuts, grains, and milk. Other criteria might come into play as well: the likelihood that a particular nutritional factor will trigger an increase in a chronic disease, the severity of that disease, the number of people likely to be affected, and estimates of whether people will change their eating habits in response to this risk.

DEVELOPING NUTRITIONAL GUIDELINES

To pin down diet-disease connections with an eye to providing the best possible dietary advice to the American public, the scientists of the Committee on Diet and Health of the Food and Nutrition Board (then under the National Research Council and since 1988 under the Institute of Medicine) reviewed thousands of pertinent studies. Most of the material in Eat for Life comes from the much larger volume Diet and Health: Implications for Reducing Chronic Disease Risk (National Academy Press, 1989), which was the primary result of that review.

The committee's charge was to determine what dietary constituents, if any, play a role in the occurrence of chronic diseases. Furthermore, the committee members were to recommend dietary changes that would promote longer, healthier lives for the general public of the United States by

reducing the risk of chronic illness caused by current dietary practices.

Several other expert groups have also addressed the importance of dietary factors to the public's health (see chapter 2 ). But aside from the recent Surgeon General's Report on Nutrition and Health (U.S. Government Printing Office, 1988), these other groups have focused primarily on identifying dietary risk factors for single diseases.

The committee members decided that there is still much to be learned about diet and its role in chronic diseases. But they also concluded that it would be wrong to ignore the large body of existing evidence supporting a link between nutrition and chronic disease while waiting for absolute proof of the benefits that we as a nation, and as individuals, would gain from making certain changes in our diets.

After all their deliberations, the committee members decided that the overall evidence for a relationship between certain dietary patterns—a diet high in saturated fatty acids and total fat, for example—and chronic diseases—such as heart attacks and certain cancers—supports three actions.

First, they devised the nine dietary guidelines that are the basis of Eat for Life .

Second, they concluded that there should be a comprehensive attempt to inform the public about the likelihood of certain risks and the possible benefits of dietary changes. That is the role of this book, as well as other efforts by the press, scientists, nutritionists, physicians, and public officials.

Third, the committee strongly believes that government and the food industry should take steps to make it easier for us to change our diets. For example, beef producers should develop leaner meat that will make it easier to reduce the amount of fat in our diets. In the same vein, food processors should use less salt and saturated fat in their products, and fast-food chains sh ould introduce lower-calorie and

lower-fat items to their menus. Government at all levels—federal, state, and local—should adopt policies and programs that promote the recommended changes and eating patterns.

AN EATING PATTERN FOR LIFE–NOT A “DIET”

The nine dietary guidelines devised by the committee can help reduce your risk of developing heart disease, hypertension, various forms of cancer, dental caries, obesity, noninsulin-dependent diabetes, osteoporosis, and chronic liver disease. These nine dietary guidelines are laid out in Table 1.1 and described in Chapter 2 .

The thing to remember when you read these guidelines is that they are not the rules of a ''diet". The eating pattern outlined in this book does not revolve around sacrifice. The eating pattern can work within the framework of any ethnic cuisine. It is not a list of foods you can and cannot eat, nor is it a series of menu plans to which you must adhere. Following this pattern is not expensive, and it may even lower your food bills. It is certainly not a complicated process that involves weighing food, dishing out exactly measured portions, or calculating the nutritional content of every meal you eat.

The nine dietary guidelines are just that: guidelines. They provide the foundation upon which you can build a sensible dietary pattern that suits your particular needs and tastes. These guidelines, in essence, form an eating pattern for life and provide you with a philosophy of eating that can guide you as you plan meals, cook, shop, and eat out

Of course, following the guidelines may require you to make some changes in the way you eat. But those changes will be evolutionary, not revolutionary—you do not have to become a vegetarian, for instance, or eat exotic foods that you can find only at health food or specialty stores. You will learn to trim fat from the meat you eat—but you do not have to

give up meat by any means, and you will eat more bread, pasta, potatoes, vegetables, and fruits.

The chapters that follow provide enough information about the links between diet and chronic illness to convince you of the need to alter your current eating pattern. And in Chapter 10 you will find practical advice on how to follow the guidelines easily in your everyday life and how to avoid common nutritional pitfalls.
