Steps to Start Small Grocery Store
There are so many sari-sari stores, convenience stores, and neighborhood groceries in the Philippines. That could mean that this kind of business might be a good one to open. So, how do you do it?
Follow these steps:
Determine your target market
You can’t just open a business without knowing your customers. Who are your customers? What do they need? Would they willingly go to your store? How you can make them visit and come again?
By understanding your customers, you’ll know what to offer and what you can do to keep them coming back.
Plan Your Business
If possible, make a feasibility study. Learn where you should put your small grocery store so it can attract more customers.
Is it better to open the store in front of your house or should you lease some space by the road? Is there enough space for your customers to park? Can they even find your grocery store?

In planning your business, you should also know how much capital you have to open the store and whether you can sustain its daily operations, particularly during the first months.
A small grocery store could need around Php1-2 million while a larger one could need at least Php5-15 million. Take note that you might not get back that capital within the year or even a few years. Can you afford that?

How to Start a Small Food Business in the Philippines

For ten years I was in the food business. From 1998 to 2008, my family and I operated a chain of hamburger stores that were franchised from the United States. Like many Filipinos, I wanted to start a small food business in the Philippines. Seeing the long queues and over-worked cash registers made the food business seem like a “can’t miss” opportunity.
But those ten years represented some of the hardest struggles of my life. Running a restaurant is not easy. When I hear people say managing a successful restaurant is all about serving good food and extending good service, I just shake my head. They don’t know the half of it.
In the United States, the failure rate of restaurants has been measured at three out of every five or 60%. Many reality shows on television feature failing, near-death restaurants resurrected by popular chefs such as Gordon Ramsey (“Kitchen Nightmares”) and Robert Irvine (“Restaurant Impossible”). While these shows do not necessarily reflect the state of the restaurant industry, they do show how difficult and unforgiving the business can be.
There are so many variables in the restaurant profitability equation. Good food and good service only cover the revenue side. Meanwhile, food cost, rent, wastage, pilferage, and salaries cover part of the expense side. We haven’t even touched on the behavioral side of the restaurant business. This includes personnel attitudes and behavioral patterns, customer relationships and the entire value chain: suppliers, vendors, landlords and contracted service providers.
Despite these challenges, more and more restaurants and food concepts are opening in the Philippines. Go to a mall, drive to the business district or even when you pass the last corner before you turn into your street; chances are you will come across new restaurants opening up.
So I decided to find out why. In my research I sought to find out the answers to these questions:
- What are the current trends in the industry?
- Which concepts are people lining up for?
- Theoretically, how profitable would these restaurants be?
- Is the “Branding Argument” still valid today?
- What qualities are people looking for in a good restaurant?
- Why are more restaurants still opening?
My methodologies included the following:
- Social media marketing. I define social media as digital “Word-Of-Mouth”. Who hasn’t been influenced by a post to try a new restaurant or coffee shop, right? I made a list of the most recommended restaurants from friends and focus groups. Then, I would schedule a visit to these restaurants on weekdays and weekends to assess the quality of food and service.
- Interviews. I would conduct random interviews with some of the customers, service crew and the store manager to get an idea of their preferences plus their viewpoints on the business and the industry.
- Time-Motion Analysis. The purpose of time-motion analysis is to measure the efficiency of the restaurant. This covers the ordering system and the time it takes to have the food served from the moment payment is made.
- Random surveys. Old habits are hard to break! This is what I used to do when I was running a restaurant. I would visit a competitor and do an accounting of the average check per customer.
- Food sampling. My preferred research methodology! Of course, I had to sample the food served. I would order one of two items: the most basic or the most recommended.
The results of my research formed my opinions on this piece. I just want to make it clear that I cannot identify the restaurants sampled in this article because this is not an advertorial. I can only go as far as describe the food and the concept.
The answers are dispersed throughout the different stages required to start a small food business in the Philippines.
First, let us define what we mean by “small.”
A small business in the Philippines is characterized as having low capitalization, low gross annual sales, and small manpower complement. So for the purpose of this article, let us forget the large-scale foreign and local fast food franchises where the required capitalization will exceed Php20 Million.
The food concepts I visited include:
- Dive-type or “hole-in-the-wall” establishments.
- Delivery concepts.
- Out-of-mall restaurants
- Food booths in well-patronized markets.
I estimate the costs of setting up these restaurants range from Php50,000 to Php2 Million. Costs include capitalization expenses, initial inventory and working capital for three to six months.
Some of these were small businesses that grew to become local franchises and the rest are local concepts that for now have no plans to franchise.
With these in mind, here is how you can start a small food business in the Philippines:
1. Define Your Concept
Product differentiation is critical in today’s highly competitive food retail market. You need a concept that will give your customer greater value.
I’ve noticed that many new concepts are focusing on customizing their products according to what the customer wants.
People think this is a great way to make the customer feel like he’s in charge and he is. But the intrinsic value of customization is that it is a great way for the restaurateur to improve his profit margin.
Everything starts out with the basic ingredients: burger patty and the bun or a pizza crust. Then you choose the toppings on your product: bacon, egg, cheese, pepperoni, mushrooms, BBQ sauce, chili; it’s all fun, and you are in control of what you want. But these toppings carry a healthy profit margin with them!
Customization is a smart concept for a restaurant because you give the customer flexible pricing options and at the same time protect your profit margin.
2. Develop and Test Your Product
Before you decide to push through with your food business, you have to develop and test your product first.
Always have the main product in your concept. If you are planning to start a Mexican-themed restaurant, perhaps create a signature burrito and store made corn chips.
Identify your Buyer Persona and create a few beta test groups. Come up with at least three versions and have these tasted by the beta test groups. Collate the surveys and interview the beta test groups on their experience with the different versions.
You must be prepared to have an extended beta-testing period because you want to fine-tune the quality of your product. The final version will determine your food cost.
3. Develop Your Service System
One of our worst customer experiences was with a restaurant that had been open for two weeks. It would have been understandable if this was their first restaurant, but it was their third!
You’d think that the restaurant owner would have figured out his system by now. Unfortunately, he hadn’t, and their Facebook page is inundated with several scathing comments on the quality of their service. Hardly anything was mentioned on the quality of their food because everyone was venting on their poor service.
Your system must guarantee quick service without compromising the quality of your food. You make your customer happy, and you increase the turnover rate of your business. High turnover means higher sales!
Developing an effective service system comes down to a number of factors:
- Preparation time of your food. You have to set parameters on how fast food is prepared and factor this in your service flow.
- Complexity of your menu. Keep your menu simple. Focus on a signature item and a few sidings for variety. The less time a customer spends on the cashier, the faster your service flow.
- Competency of your restaurant crew. Your cashiers are your front-line sales people. They must know the products like the back of their hands. They must know which items to recommend or to push. The same goes for waiters if it is an ala carte system.
- Inventory turnover. If you have items that need to be marinated for 24 hours, make sure these are properly rotated from freezer to refrigerator to the marinade bath in time for cooking.
- Product forecasting. In addition to slow service, the worst thing for a restaurant is to run out of stock. This comes down to poor product forecasting.
4. Conduct a Project Study
Once you have your product and system finalized, commission a project study. This must include the following:
- Market Study. Find out if there is demand or a market for your product. Determine your Buyer Personas and learn their purchasing behavioral patterns.
- Marketing Study. Design a marketing framework on how you plan to reach your target market. This is important for your branding strategy.
- Financial Study. This will make or break your plan to start a small food business in the Philippines. The financial study will determine how much capital you will need to set up and maintain your business for at least six months.
5. Build a Business Plan
The project study will be the basis for your Business Plan. This is a necessary document which will be the blueprint or reference point for your restaurant.
Additionally, the Business Plan will be the reference point if you are trying to secure funding for your business. Banks, investors, incubators and accelerators and potential partners would want to know everything about your business.
For them, yours will be an investment, and they will want a substantial return on their money.
6. Register Your Business
When you have secured enough funding, it would be time to register your business.
You can register your business online. If you plan to set up a corporation go to the Securities and Exchange Commission or SEC website . If it is a single proprietorship or partnership, register your business at the Department of Trade and Industry or DTI website .
As a registered business, you can avail of better credit terms with suppliers and leasing arrangements with landlords.
7. Identify Your Location
It used to be that the success of a restaurant would depend greatly on location. But that may no longer be the case today.
One of the best burgers I’ve tried was not located in a high-traffic area. In fact, if you were not looking you would probably miss it. It took us 45 minutes to find the place. But it was worth it. The burger was so good!
Why did we try the place? I read about it on Facebook. Social Media is “Word-Of-Mouth” in the virtual world. When I visited their Facebook page, all of the comments were encouraging. Even the Google search results yielded positive reviews.
Be that as it may, having a good location with a high volume of foot traffic, plenty of parking options will always be a plus for your business.
Here’s my two cents worth of advice: Forget the malls! These are over-rated locations. Yes, they do bring in the volume, but they also bring in the competition. Ever notice the high number of empty restaurants inside the mall?
Another thing is some malls calculate rent as “34% of gross sales or the fixed rate, whichever is higher.”
Do the math: If your food cost is 50% and labor cost is 10% how much money would you have left if rent is pegged at 34%?
8. Develop Your Brand
One of the biggest mistakes by food retailers is not developing their brand at the start. I should know because this was one of my biggest mistakes when I started out.
Our product had so many selling points, but we could not settle on one that would define the main item. We also had a supporting dish that encroached on the role of the main item. In the end, the branding strategy was a convoluted mess.
Back then, we had to rely on traditional marketing strategies which were expensive, unsustainable and difficult to measure. The ROI on traditional marketing is very low.
Today with online marketing tools, strategies can be updated, improved and revised because performance can be measured in real time. Online marketing strategies are also more affordable which result in higher ROI.
It is much easier to develop a small food business brand today through online marketing. All you need is an interactive e-commerce website, Twitter and e-mail marketing for market acquisition, Facebook, Pinterest and Instagram for posting content and regular blogging activity.
Hire a social media manager or digital marketer to put these all together so you can generate leads for your business.
9. Qualify Your Suppliers
The key to having a profitable business is having a great tasting product that offers value and quality for the customer and an attractive profit margin for you as the proprietor.
In the burger restaurant, we visited a quarter pound burger costs only 50 pesos. Compare this with the regular fast food burger which costs three times but does not taste anywhere as good as this burger.
The restaurant’s concept is to grill your burger upon order. I noticed the burgers were not made uniformly which told me these were formed inside the store. In fast food restaurants, the patties are delivered blast frozen from a meat refinery.
A kilo of ground beef costs at the supermarket is around 188 Pesos per kilo. Thus, for a quarter pounder, the cost of the patty would be 26 Pesos. I’m assuming the proprietor buys local ground beef directly from a manufacturer at 20% less the regular price. Adjusted, the food cost of his patty should be at 21 Pesos or 42%.
In the fast food business, food costs can exceed 50%. This is why for fast food the name of the game is volume. They have to sell more to recoup lower profit margins.
Fast food margins are very low because everything is refined, packaged or imported. For example, their French fries are imported either from Portland, Oregon or Australia.
But did you know you can make better French fries from store bought raw potatoes? All you need is a high-starch variety like Russet potatoes. Cut them Julienne style and soak them in water overnight to get rid of excess starch. The following day they are ready for frying.
And the cost? At least 50% cheaper than the imported fries!
Find a supplier who can assure you of consistently good quality ingredients at lower than retail prices. As a contingency plan, look for at least two suppliers. The competition will keep them honest, and you are assured of a second supplier if the other one runs out of stock.
10. Hire Right-Fit People
This is the Waterloo of several restaurants we tried. Service is consistently horrible.
The service crews are not prepared or trained properly. They do not know the menu, have no personality and appear lost most of the time.
The restaurant managers are not proactive. Most of them are just standing around like a coat hanger. They are not supervising the floor or attending to customers.
Some of the off-duty services were interacting with the front line crew which only served to distract the cashiers from doing their jobs. In one restaurant which served grilled chicken, the manager and the service crew was sleeping on some of the tables!
Meanwhile, in a Dimsum kiosk we visited, the attending crew was busy gossiping among one another even though a line had formed in front of them.
The food business isn’t just about the quality of your food. You must invest in the right people to manage your business. Qualify them accordingly and give them all the training they need. These are the people who are willing to work long, hard hours in the restaurant and give their best every single day.
Even though my restaurant did not succeed, I was blessed with having worked with some of the best people as service crew and managers. It did not matter if the store had only one customer or 1,000. They always gave their best.
In fact, when I moved from the food business to BPO, I brought them with me!
11. Do a Dry Run
Do not open your doors to official business unless you are 100% certain the serving system and the crew can handle a high volume of orders.
Conduct a 1-2 week dry run to iron out the kinks of your service and to give your people more practice. Start out the dry run during off-peak hours such as 2:00 pm to 6:00 pm.
As the crew becomes more confident, move the dry run to busier hours. Try dinner hours or 6:00 pm to 8:00 pm which is shorter and less busy compared to lunch time.
Promote the dry run in social media and give incentives so people will go out of their way to try your food. A good campaign would be: “We are on DRY RUN. Only 100 burgers will be served from 2:00 pm to 5:00 pm. First come, first serve only. Once the door closes, try again tomorrow!”
Another one would be: “We are on DRY RUN. First, 50 customers will be given 50% discount on their burgers!”
12. Official Day 1 of Business!
When the surveys and figures show that the restaurant is ready for official business, schedule the day when your small food business will finally open to the public.
When I was planning the launch of our restaurant, we focused a significant portion of our limited resources on developing nice looking menus and menu boards.
Trust me when I say hardly anyone will care about how your menu will look like. In every menu, the diner will primarily focus on one thing: Price.
Save your money and keep your menu designs simple. Some of the restaurants we visited only used the blackboard or print outs.
Start your Small Food Business in the Philippines
Lastly and most importantly, if you plan to start a small food business in the Philippines be prepared to embrace the grind! The food business is very tough. There will be long hours, and you have to manage many variables to make your business profitable.
As a parting thought, I believe you no longer need to own a franchise to succeed in the food business. The selling points for franchising were that you were buying a “tried and true system” and a “recognized brand”.
For these, you have to fork over a franchise fee of anywhere from 250 Thousand Pesos to 20 Million Pesos plus monthly royalties of 7% to 12% of gross income. Again, do the math. Now you have to capitalize the franchise fee! I’m sure there will be nicer things to look at than your income statement.
I enjoyed and had the best experiences with the “hole-in-the-wall” establishments. The food was great, and the service was good, and the overall value was excellent. My worst experiences were with the mall-based establishments and franchises. Service was bad; most of the time food was out of stock. And the quality was between fair to good.
If you invest time and resources, you can fine tune an efficient service workflow. As far as the branding argument is concerned, social media and other online marketing tools have rendered this myth. If you consistently offer great food with great service, the online community will build your brand.
If you plan your business well and commit to building it, your concept may grow to become a very lucrative and rewarding enterprise.

For those with aspirations of culinary greatness, a food truck is the perfect setting to develop new recipes while building a fan base, or even an online business, without the expense and risk of opening a brick-and-mortar restaurant. There is even a street food chef in Singapore with a Michelin star, proving that you don’t need a giant kitchen and 50 sous chefs to build a reputation for quality, innovation, and deliciousness.
With the increasing popularity of food trucks, it’s essential to prep your operation before you start prepping your mise en place. A solid food truck business plan puts you at the front of the grid when the race begins.
Writing your food truck business plan
Starting a street food business is subject to the same challenges and pitfalls as any other startup operation. But there are special considerations for food trucks to address before you open the window to start slinging sandwiches (or tacos, or barbeque, or …)

From the executive summary to the financial details, we’ll show you how to build a food truck business plan for savory success.
Executive summary
Even though this is the first section in your business plan, it’s the last section you should write. Your executive summary captures all the highlights from the rest of your business plan, so get those sorted out first.
When it’s time to write this section, think about your audience. If you’re writing a business plan for yourself as a way to stay organized, motivated, and focused on your goals, this summary can be quick and dirty.
Don’t worry too much about style or flair—instead stick to the most important elements of your business plan. You might even use bullet points to create a checklist of the major tasks that you’ll need to complete before you can start dishing out Korean fried chicken.
If your business plan is meant to secure a loan from a bank, your executive summary will need to focus on profit, reliability, and the fact that you know what you’re doing —so your food truck feels like a safe bet.
While it’s important to mention what makes your food service model unique, spend plenty of time showing that you also understand the realities of running a small business.
Company overview
This section is your opportunity to explain what is going to make your vehicular vittles different and more successful than every other food truck on the road.
As part of this section you’ll need to tell your audience what makes you capable of running a profitable food business. Do you have professional cooking experience? Have you managed a commercial pantry before? Do you have an existing reputation for creating delectable meals? Banks might invest in you based on the strength of your idea, but experience will improve your chances.
At Eats Amoré, even though neither Mikey nor Natalie has professional cooking experience, they do have a proud family history of producing delicious food. “Natalie learned to cook from her grandmother, who’s from Naples, Italy. And then her mom is an organic farmer, so she learned traditional recipes with fresh ingredients, which is the backbone of Italian cooking.”
In addition to your own position in your food truck business, this section is the place where you’ll outline the types of employees you have or will need to hire. Food trucks are small, so chances are you won’t need a lot of staff out on the road, but you could consider hiring prep staff, cleaners, etc.
The company overview is also the best place to set some goals. As a short-term goal, most food truck owners (and restaurateurs for that matter) aim to pay off the bulk of their startup costs (licensing fees, insurance, supplies, food, website, branding, etc.) within the first year, though this will depend heavily on your anticipated margins.
Other short-term goals may include building a social media following, finding predictable parking spots to encourage repeat traffic, or securing a spot at a big event.
Your largest capital investment is, of course, the truck itself. Although food trucks cost a lot less to set up compared to brick-and-mortar locations, they can still set you back between $50,000 and $175,000 , depending on what kind of food you’ll make and the equipment required to do it. Paying off your food truck is likely to be your major long-term goal.
Market analysis
A huge factor in setting your business up for success is understanding the market where you will operate.
Restrictions
Since food trucks are mobile, you’ll enjoy some flexibility compared to a restaurant, but many cities still restrict where, when, and how you can serve your customers as part of the license that allows you to operate (which costs an average of $1,800 ).
If your ideal customers live and work in an area or at a time when you can’t sell to them, you could be in for some difficulty. For example, if you were to open a food truck in Vancouver, you would find that restrictions include:
- Not operating during nighttime hours
- Avoiding certain neighborhoods
- Staying 100 meters away from brick-and-mortar restaurants
- Staying outside park boundaries
- And plenty more
In some cases, you may find that food trucks have not yet been considered in city regulations, and you may have to blaze a trail for your business, like Mikey and Natalie did. “We had very limited locations that we could pick from. The zoning in Kamloops was absolutely terrible. We were not looked very favorably upon. So after many council meetings and lots of emails with counselors and going back and forth, we finally got the city to give us a pilot project location in the downtown core.”
Every city has different restrictions that affect food truck owners, so be sure to consult the city hall website in your area. And start early—licensing can take time, especially in locations with high demand.
Local conditions
Beyond the restrictions imposed by municipalities, each city is subject to conditions that could help or hinder your business. If you’re planning an ice cream truck for Edmonton, you might only have the warm, sunny weather you need for four months of the year, severely limiting profits. Conversely, the same ice cream truck in San Diego, with 266 days of sunshine on average, might be a sensation with lines around the block.
You should also take into account population in your city, demographics, foot traffic in your preferred neighborhoods, and the number of events that host food trucks, in order to establish an estimate of how many days per year you are likely able to operate.
Competition
Lastly, consider competition. Are there already a lot of food trucks in your city or in the area where you would prefer to park? Is there a robust restaurant scene driven by owners who don’t want food trucks diverting their customers ? Too much competition and you might have trouble finding customers or a place to park. Too little and you may find that there is a reason no one is running a food truck.
Products and services
This section is your opportunity to outline your creative food vision, so keep in mind that there are some limitations and considerations when it comes to the meals coming out of your truck.
- Food should be easy to eat in a variety of settings, such as on a bench, standing on the sidewalk, or at a crowded concert, without spilling down the front of a CEO’s Brooks Brothers shirt.
- Keep it simple: while you may be able to make complex individual dishes, trying to offer a broad, complicated menu with limited space, staff, equipment, and storage could prove to be difficult or impossible.
- A long menu can be intimidating or time consuming for those trying to order quickly during their lunch break.
- Try to fill a niche in your city. If there are already a lot of pizza trucks but no Thai food, make som tam instead of a margherita pie. Or, for example, if you live somewhere with plenty of trucks making mediocre burgers, your ultra-high-quality version might corner the market. You can also differentiate your offerings based on cost .
Go out and study the existing food truck scene in your area to get an idea of what might work. “We made a point to go to Vancouver to talk to as many owners as we could. What are your hardships? What’s going on? But then we also went to Seattle and Portland and a lot of those trucks gave us a lot of advice,” says Natalie.
Alternate revenue
This section is a good place to consider additional revenue streams such as online sales of things like bottled sauces, spice packs, baked goods, etc. Selling online can be a lifesaver during quiet winter months, when festivals aren’t happening, or even during a global pandemic.
Eats Amoré has found that online sales and catering bookings via its Shopify website are becoming increasingly important to its bottom line. “It’s to the point where we have to turn it on and turn it off because it’s so busy,” says Mikey.
We came up with this idea called the Ravioli Club, which is essentially a membership that you buy from our online store, and you get three mystery deliveries of ravioli delivered to your house every two weeks.

Mikey wasn’t always an ecommerce expert: “I was very green in learning how to do all the online sales, and I’m still learning a lot,” he says.
"And even with the small increments of learning that I’ve done, sales are going up exponentially. Not only has it boosted our sales, but it decreased the amount of time that I have to spend doing back and forth work with people. Because once you have all your information laid out on the website, you get a lot less tire kickers and you get a lot more people that call you and want to hire you [for catering]."
Customer segmentation
This area of your food truck business plan is where you’ll outline your ideal customer. Where do they live? How old are they? What kind of foods do they like? How much disposable income do they have? You’ll need to do some serious demographic research to fill in this section, since every city and neighborhood is different. Then use it to inform your menu and pricing.
If you plan to set up outside rock concerts and baseball parks, caviar and foie gras could be hard to sell, while home-cooked barbeque might not do well on the street in front of your local opera house. Ask questions to determine what your potential customers want.
Marketing plan
You can make as much delicious food as you want, but if no one knows about it, you’re going to have a hard time making a profit. Your marketing plan is essential to the success of your business and this section is where you’ll outline it for yourself or your loan officer.
Branding and communications
Start by detailing where you’ll park and what your truck will look like , since these are the two biggest factors in attracting walk-by customers. Next, show how you’ll raise the profile of your business beyond passersby using traditional marketing techniques and, especially, social media.
Sugar + Spoon in Seattle has done an amazing job of coordinating the look and feel of its food, trucks, website, and excellent Instagram account to reinforce its brand recognition wherever customers may encounter it.
If you intend to park in different locations on different days, having dedicated followers on Instagram, Twitter, and/or Facebook is a great way to let people know where they can find you. Social media is also the perfect place to update your followers on new menu items. Remember to take great photos of your food for maximum impact.
Your marketing plan should also account for what makes your offerings different from everyone else on the road. In the Products and Services section, we discussed how your menu should fill a niche, whether it is the type of cuisine, quality, or cost. In this section, you’ll need to provide details on how you plan to communicate those differentiators to your customers.

For example, Eats Amoré publicly refers to its cuisine using the acronym S.S.O.L (seasonal, sustainable, organic, local), which sets it apart from other food trucks that may be serving Italian dishes without the care, ingredients, or legacy that go into everything Mikey and Natalie cook.
Natalie finds that “people are so liberal with mac and cheese. … There’s other trucks that put mac and cheese on a hot dog or they put mac and cheese on a grilled cheese.” Not particularly authentic.
Mikey agrees: “I think there’s so much room in the culinary world for creativity that if you are not being creative and you’re just trying to mimic someone else, customers will see that. Would you want some Italian food from the Italian truck or the one that kind of looks like a burger or hot dog truck?”
Online ordering
Speaking of technology, this is a good time to explore the possibility of having your customers interact with you via smartphones and computers.
You may want to offer online ordering with delivery or pickup, which can be accomplished using third-party services like DoorDash , Skip the Dishes , Uber Eats , or any number of apps preferred in different markets around the world—be sure to find out which app most restaurants and delivery services use in your area.
Not having to wait in line could be a boon for hungry, busy office workers and increase the amount of business you’re able to do in a day.
A less obvious facet of your marketing plan is your start date. If you plan on opening right when the good weather hits, you’re likely to be too busy to spend a lot of time building a brand identity and online presence, though your cash flow will probably be in good shape.
Conversely, opening during a slower time of year may result in fewer sales but will allow you to get organized and accustomed to the pace of running a food truck. If you live somewhere with proper winter weather, you may want to consider taking some time off through the darker months.
“A huge mistake that we had in our first year’s business plan was that we were going to work through the winter,” says Mikey. “But what I forgot was that the people in Kamloops are very fair weathered. They’re used to nice weather. So a little bit of cold and they’re like, No, we're out of here. It wasn't until last winter that we actually did become a year-round business when we opened our Shopify account."
Logistics and operations plan
This section is where you’ll need to dig into the nitty-gritty, day-to-day operations of your food truck.
Supply chain
You need ingredients in order to sell food. But where will you get them ? Let’s look at your options.
Restaurant wholesalers
Example: Sysco
Pros: Reliable and cost effective.
Cons: Large volume-packaged products could be hard to store on your truck.
Wholesale clubs
Example: Costco
Pros: Convenience—shop whenever you want.
Cons: Prices may be higher than restaurant wholesalers.
Grocery stores
Example: Trader Joe’s, local greengrocers, specialty markets
Pros: The greatest variety of ingredients, including local, organic, and specialty items. Smaller package sizes.
Cons: High prices.
Many food truck operators use a combination of suppliers to achieve their goals, so look at what is available in your area that fits into your menu and budget. Also consider your menu: if you have a fixed set of meal offerings, will you be able to reliably get the same ingredients throughout the year? If your menu rotates frequently, will you have time to source new ingredients on a regular basis?
Mikey has found that the sources of their organic and local ingredients are part of the appeal of their truck.
It is a slightly more expensive route to go because locally grown food is better. But our menu changes all the time. It’s seasonally rotating. And I think that creates a bit of a supply and demand thing too, where if you want that [ingredient] and it’s in season, get it now because it won’t be here in two weeks.
Your truck is your facility. So think carefully about what kind of vehicle you decide to buy.
Mikey says, “We got this HandyDART bus for a steal, and we spent the beginning of 2013 turning it into a food truck. We learned so much. It’s a fiberglass vehicle, which wasn’t ideal compared to a big stainless truck. But we made it work.” Retrofitting a vehicle that isn’t perfect may be an option considering your budget and skill set, or you may want to purchase a vehicle that was purpose-built to be a food truck.
But your facility requirements may be substantially more than just putting four wheels on the road. This is the place to outline the physical equipment and maintenance requirements for your business, such as:
- Specialized cooking equipment
- Fuel (cooking and engine)
Many cities also dictate that some aspects of food preparation, such as chopping vegetables, making soups, baking bread, or preparing other ingredients, be done in an off-site commissary kitchen outside of sales hours, rather than in the food truck or in your home. This is to ensure food safety, and you’ll need to factor the cost and logistics into your plan.
It’s also a good idea to determine if you can store additional ingredients at your commissary kitchen location.

Production capacity
How long does it take to make an item from your menu, on average? This is a major consideration that could limit how many customers you can serve in a day. And unlike brick-and-mortar restaurants that can bring on more staff during busy periods, a food truck is likely limited to just a few people, no matter how many hungry folks are waiting.
How do you intend to cope with changes in pace and demand over the course of a day, week, month, or year? Mikey notes, “I go home and do dishes for two hours. It's far more labor intensive than people realize.” So don’t forget to factor in how much work you can realistically do yourself.
If you plan on offering products for sale online, you’ll need to sort out a plan to ship them to customers. Fortunately, shipping can be accomplished quite easily at reasonable prices .
Financial plan
Like most businesses, yours will likely live or die on the strength of your financial plan. You have to know how much money is coming in , how much is going out, and how those numbers are likely to change in the future. So be sure to dig deep into your prospective balance sheet to truly understand how profits and costs will affect your operation.
Profit margin
Fortunately for you, startup costs on a food truck are a lot less than a brick-and-mortar restaurant, so your break-even point could come a lot sooner. That said, your profits could be limited by the food truck model.
Many municipalities don’t allow food trucks to serve alcohol; traditional restaurants tend to assume a 30% profit from alcohol sales, which you probably won’t be able to access. Instead, food trucks can expect to average about 8% profit , which means they are a volume business. You’ll need to work fast to serve a lot of customers in order to earn a profit.
In addition, certain cuisines, like burgers, have a perceived upper price limit in the minds of consumers. Regardless of how much it costs to make, it could be tough to get people to shell out $25 for a food truck hamburger, depending on where you set up shop—menu pricing is critical to your financial plan.
You’ll also need to outline your cash flow scenario . Since food trucks can’t store a lot of inventory (ingredients and supplies), you’ll need to sell and restock more frequently than a brick-and-mortar restaurant.
Additional costs
This section is also the place to factor in other costs, such as licensing, maintenance, and staff wages, if you have employees. And if you don’t plan on hiring help, remember that you probably can’t work 16 hours a day, seven days a week, which will limit your profits too.

The Supplemental Nutrition Assistance Program allows families and individuals in need to supplement their grocery budget with funds received via electronic benefits transfer.
Early in the pandemic, the U.S. Department of Agriculture provided extra emergency allotments for SNAP recipients. However, some states have already phased out those additional payments and they will end nationwide this month. In addition, for people receiving both SNAP and Social Security, January’s cost of living increase in Social Security payments may have reduced their food benefits by raising their income.
Vince Hall, chief government relations officer for the hunger-relief organization Feeding America, said in an email that ending the extra assistance cuts nearly $3 billion per month in food purchasing power from the economy.
And the populations that often rely on SNAP food benefits, like seniors, people with disabilities and families with children, will have an even harder time covering the cost of their groceries.
Between sticker shock at the grocery store due to rising prices and those recent changes to SNAP benefits, it’s important for households who rely on SNAP to get the most out of their budget.

5 ways to stretch your SNAP benefits
Here are some ways to make the most of your food budget during hard times .
1. Buy staple foods in bulk
Stocking up on basic food staples can help you maximize your monthly SNAP food benefits. In addition, many pantry essentials can serve as a base for cost-effective and satiating meals.
“Staple foods like rice, beans and pasta can be affordable and filling, making them a good way to make the most of your SNAP benefits,” certified financial planner Gabriel Lalonde said by email. “Look for deals on these items and consider buying in bulk to save even more money.”
2. Shop at farmers markets
You may be able to double the value of your SNAP food benefits by shopping at your local farmers market through a program called Double Up Food Bucks. Check the program’s website to see if your state is among the more than 25 participating. Double Up Food Bucks lets SNAP recipients purchase more fresh fruit and vegetables by matching the value of their benefits at participating markets and grocery stores.
You may also find that your money goes further at nearby farmers markets .
“Farmers markets can be a great way to stretch your SNAP benefits, as you can often find fresh, local produce at lower prices than you would at a grocery store,” Lalonde said. “Buying in-season produce can also be more affordable and nutritious than buying out-of-season produce that may have been shipped long distances.”
3. Use coupons and discounts
Try cutting some of your grocery costs by taking advantage of coupons. Even if you only save a small amount, it helps.
“Be on the lookout for coupons and discounts, which are often available at many grocery stores, “ Andrew Lokenauth, founder of BeFluentinFinance.com, said by email. “Special deals or loyalty programs can reduce the cost of your groceries. You can even look for coupons online or in your local newspaper.”
The USDA’s MyPlate App offers a tool called Shop Simple that may also help you save. “The Shop Simple with MyPlate tool helps people find savings in their area and discover new ways to prepare budget-friendly foods,” Jairea McClamb, a USDA spokesperson, said in an email.
4. Find out if you qualify for additional assistance programs
If you qualify for SNAP benefits, you may also be able to use additional assistance programs . For example, seniors who meet SNAP requirements can also participate in the Senior Farmers Market Nutrition Program , which allows seniors to receive discounts on local produce, honey and herbs.
The USDA also offers seniors a monthly food box full of nutritious foods through the Commodity Supplemental Food Program.
Even if you aren’t a senior, if you are low-income, you may still qualify for local or federal additional programs that help with food and other essentials, so it’s worth it to do some research. The USDA offers 16 nutrition assistance programs .
McClamb also pointed out The Hunger Hotline, which links people with emergency food providers in their community, as well as government assistance programs and social services. Call 866-3-HUNGRY (866-348-6479).
5. Plan your meals
You can help your SNAP dollars stretch a little more by planning your meals, especially if you focus on including staple foods.
“By planning your meals ahead of time, you can efficiently allocate your SNAP benefits,” Lokenauth said. “Making a grocery list and buying in bulk can save you money while minimizing food waste and making the most of your ingredients.”
Want meal inspiration using SNAP-eligible foods? The USDA has several recipes on its website that offer meal ideas, including seasonal ones. There’s also a cookbook called “Good and Cheap” by author Leanne Brown, featuring low-cost meals geared toward people receiving SNAP benefits. You can download the cookbook for free online, in either English or Spanish.
“Cooking with seasonal produce is another way to save money while preparing nutritious and budget-friendly meals,” Lokenauth notes.

JONESBORO, Ark. (Gray News) – The divider is divisive. That checks out.
A Facebook post by meteorologist Ryan Vaughan from KAIT , a Gray Television station in Jonesboro, Arkansas, has gone viral, with 20,000-plus reactions and 12,000 comments.
The topic? How to use the dividing bar in the grocery checkout line.
“This started as a goofy conversation between my wife and I at the grocery store,” Vaughan said Friday. “I like to put the divider longways so that my groceries don’t go right up against the people in front of me paying.
“It was a boring weather day, so I posted my opinion on Facebook, and everyone went crazy.”
The chief meteorologist unleashed a high-pressure system of many others’ thoughts and opinions.
“I’m at the store tonight and noticed some of you don’t know how to use the divider,” Vaughan wrote in the post Saturday. “You need to put it long ways to trip the sensor and keep a distance. Some of y’all use it as a privacy fence.”
He added two photos, one with it placed longways and marked “right,” the other horizontally and marked “wrong.” Vaughan added a pair of laughing emojis.
While many commenters were along for the ride, other seemingly serious folks were quite critical.
“I have no clue who you are but you apparently think you’re someone important enough to re-educate people on the way you handle such a menial topic. By the way your right is absolutely wrong,” one wrote.
Some brought COVID, social distancing, politics and the overall quality of meteorology into the discussion.
Others offered alternatives, like standing it on its end or using multiple dividers to make shapes. One guy brings his own.
“I take a 24″ 4x4 with me when I shop and use that, parallel to the belt. Never have a problem, do get some looks though,” he said.
Vaughan has kept the party going for several days with his responses, including a tease on how you may be doing the drive-thru wrong - to be continued?
“It doesn’t take much to fire up the world,” he added in the comments.

A pair of colleagues from Kentucky are splitting a $50,000 prize after winning a scratch-off game together.
Tyesha Trice and Dylan Mitchell, two cashiers who work at a Valu Market grocery store on Bardstown Road in Louisville, purchased Kentucky Lottery scratch-off tickets from their employer during their break, the lottery board shared in a press release issued on Tuesday, Feb. 28.
The duo reportedly won $100 from a $30 ticket and followed through with a $50 500X ticket.
