It may be especially helpful to look at the plating and presentation process as generally following a series of steps. This starts with choosing a plate, then deciding how the main dish and core sides are arranged or layered. From there, it’s common to move onto sauces to create visual contrast and shapes that aren’t easily rendered with more solid food. Finally, the garnish provides a finishing touch.

Bright colors work well against a dark background, while more neutral or subdued colors can use a white background to create some visual excitement. Besides the colors of the foods, different techniques for adding color might include the use of sauces, spices, and garnishes like fruits or flowers.

There are many food presentation techniques related to sauces that a chef can experiment with. A guest’s name spelled out in chocolate drizzle on a dessert plate is a fun way to celebrate a birthday. Dots, smears, and swirls of bright sauces add visual interest for both sweet and savory dishes. Practice with piping bags or squeeze bottles to perfect the hand control required for these sauce techniques.

Food presentation isn’t just about what to add to the food or how to style it. The tablecloth, place setting, and cutlery play a part, too. For in-restaurant dining, make sure your tables are welcoming with candles or flowers. If a guest is ordering to-go, the packaging is part of the visual appeal. The arrangement of an appetizer is everything: it must be enticing and easily shareable. A fried onion bloom is iconic for this reason. To make an engaging and interactive appetizer experience, consider plating it in a way that’s fun and interactive for your customers. For example, mozzarella sticks can be arranged around a focal point (marinara dipping sauce) or stacked on top of each other like Lincoln Logs. Top with a leaf of lettuce for a roof. Sugar is cheap and you already have it on hand: just learn some techniques to create garnishes to top your crème brĂ»lĂ©es and cakes. Sugar can be twisted into some truly stunning and unique shapes when caramelized.   • When you're planning meals, think ahead about the colors you want to feature on the plate. You might not be able to represent all the colors of the rainbow at every meal, but challenge yourself to have as much color as possible.

The richest greens, oranges, reds, purples, blues, pinks, and yellows on your plate probably take the form of fruits and vegetables.

  • Roast or sautĂ© them with a little oil or butter. Roasted or sauteed vegetables look quite appetizing when they're allowed to caramelize a little in oil or butter. The bright orange or green of the vegetable is offset by brown, crispy spots. It's a delicious way to cook vegetables.

Step 3 Sear your meat and let it rest.

  • There are exceptions to the rule of searing your meat. For example, if you're serving braised beef , you'll have to think of creative ways to make the meat look appetizing even though it doesn't have a crispy crust. Serving it with a sauce is a good way to add visual interest.

Step 4 Cook fried foods carefully.

  • Fried foods often continue browning a bit after they've been removed from the hot oil. Carefully monitor foods as you're frying them to make sure they don't get too dark.
  • Take pains to handle the fried foods gently so they look appetizing when you're ready to plate them. For example, if you need to check whether a piece of fried chicken has reached the correct internal temperature, stick the meat thermometer in a place where the resulting hole won't be visible. Step 5 Take texture into account.

  • The way you handle the food just after it has been cooked, and before it is plated, can really affect the texture. Pasta, for example, should be kept in water or tossed in a bit of oil just after cooking so that it doesn't start to clump. [9] X Research source Fried foods should not be covered with airtight lids because the heat from the food will end up steaming the breading and causing the food to get soggy.
  • Once the food is on the plate, a spritz of oil or water can improve its visual appeal if it looks too dry.

Step 6 Experiment with interesting shapes.

Plating it With Care

Step 1 When in doubt, choose white plates.

  • That said, there are exceptions. If you have a set of special plates with a pattern or a certain color scheme, it's fine to use them. Just make sure they complement the food you're serving instead of vying for attention.
  • Don't forget to take the rest of the table into consideration, too. Cutlery, glasses, and linens will enhance the overall appearance of the dish upon the table.
  • When looking for interesting tableware, try going to Asian grocery stores, craft or flea markets, and antique stores. You can find some very interesting tableware from all of these sources.

Step 2 Visualize the finished plate.

  • As a general rule, half of the food on the plate should be comprised of vegetables, one fourth should be comprised of meat or another protein, and one fourth should be comprised of a starch.
  • Start plating food in the center of the dish and work outward from there so that the food is centered in the middle of the plate.

Step 4 Follow the rule of odds.

  • To quickly add some crunch to a dish, try topping it with some crushed, roasted walnuts, almonds or pepitas.
  • A dollop of crème fraiche or some pieces of goat cheese can add a soft, creamy texture to savory dishes. Whipped cream or pastry cream is a good way to add a soft element to sweet dishes.

Step 6 Layer foods to add height.

  • An easy way to start layering food is to serve the protein on a bed of starch. For example, serve a kabob on a heaping of rice, or serve grilled swordfish on a pile of mashed potatoes.
  • You can use sauces to layer as well. Ladle a pool of au jus, marinara, or whatever sauce you're using into the center of the dish, and arrange the other elements of the dish on top.
  • Aim to make foods look bigger, not smaller. Fluff up your salads, for example, instead of smoothing them down. Create a little cross-hatched stack of cooked asparagus instead of presenting it in one flat layer. [17] X Research source

Step 7 Use sauce wisely.

Adding Appetizing Touches

Step 1 Use garnishes that enhance the flavor of the meal.

  • If you serve a dish with lemon or lime wedges, consider creating slender, pretty twists instead of slicing them into thick wedges. This might entice the diner to actually use the garnish instead of scooting it to the side of his or her plate!
  • Think outside the box and use garnishes you might not normally consider. Sprinkle a dash of cinnamon over a chicken dish, or a handful of pomegranate seeds over an otherwise ordinary salad. Choose garnishes that add a burst of both flavor and color.
  • In many cuisines, flowers are an acceptable garnish or a large inedible leaf sitting underneath the food. In broader Western culture, it's recommended that nothing inedible be served on the plate. As well, since certain garnishes can affect the flavor, choose carefully.

Step 2 Employ drizzles and swirls.

  • Rather than just pouring a sauce over your food, consider putting it in a squeeze bottle so you can create a pretty swirl or pattern. [19] X Research source If you don't have a squeeze bottle, put the sauce in a plastic food storage bag, cut a small piece off one of the corners, and squeeze the sauce through the bag.
  • Don't overdo it. The key is to add a touch of color, flavor, and texture without overpowering the main part of the dish.

Step 3 Make sure the plate is clean.

  • If you're serving the pasta with a protein, arrange it attractively on the heap of pasta. For example, if the dish includes shrimp, place the shrimp on top instead of burying the pieces inside the pasta heap.
  • Just before serving, you can mist the pasta with a bit of olive oil to make it glisten attractively.

Step 2 Present

  • Soups and stews tend to splash and run, so it's also important to make sure that the sides of the bowl or plate you're serving them in are wiped clean before serving.
  • Casseroles might also come out on the brown side. Serving them alongside a bunch of fresh salad greens is a good way to offset the neutral-looking main dish.

Step 3 Enhance desserts that taste better than they look.

  • Use a cookie cutter to create a neat shape. A star or leaf-shaped brownie will look more interesting than your basic square.
  • Serve it with mint. Adding a few fresh sprigs is a great way to enhance many desserts, especially fruity ones.
  • Sprinkle cocoa, cinnamon or powdered sugar on top. Choose the powder that contrasts in color to the dessert you made.
  • Sprinkle crushed peppermints on top. It'll look like you topped your dish with pink glitter.
  • Speaking of glitter, add edible glitter to the dish to take it over the top.
  • When all else fails, plate it with a swirl of whipped cream. [23] X Research source You can pipe it through an icing bag fixed with a star-shaped tip to create a visually pleasing shape.

When you’re plating food, try to visualize what the finished product will look like. Only fill the plate about two-thirds of the way, since the negative space will accentuate the appearance of your food. Michelle Cockrell, B.S. Microbiologist Office of Regulatory Affairs Irvine Medical Products Laboratory U.S. Food and Drug Administration

Michelle Cockrell received her undergraduate degree in Microbiology from the University of Oklahoma in 2017. She worked as a clinical microbiologist and molecular biologist for the Oklahoma State Department of Health where she developed an interest in whole genome sequencing and its significance as a tool for public health. In 2021, she moved to Irvine, California to start her career with the Food and Drug Administration. Now, she works as a microbiologist and lead for the whole genome sequencing workgroup for the Irvine Medical Products Laboratory.

About the Presentation

Whole Genome Sequencing has been used in FDA’s Human and Animal Food Laboratories for several years, but what about in the medical products laboratories? This presentation will discuss the application of this method as an additional analysis used during the 2023 Pseudomonas outbreak in eye drop products. ORS’ collaboration with the CDC and CFSAN partners led to key information that linked the outbreak strain to the implicated products, providing a scientific basis for FDA to pursue regulatory action.

  • Describe how whole genome sequencing can determine relatedness among isolates.
  • Discuss how whole genome sequencing was used to link the implicated products to the outbreak strain during the 2023 Pseudomonas outbreak in eyedrops.

Q&A with Alec Schaefer - 2024 Young Hospitality Summit Competitor

The March 11th – 13th summit included various activities, from thought-provoking discussions to various networking opportunities, and the YHSChallenge where teams worked to create a solution to the case presented.

With this year's theme, "Bridging Concepts, Beyond Realities", YHS 2024 brought together 26 speakers, 65 delegates from 25 institutions, and guests from around the world to present their vision of the future.

Alec Schaefer, a 4th year Hospitality & Tourism Management (HTM) co-op student from the School of Hospitality, Food and Tourism Management (HFTM) at the University of Guelph was selected to participate in the annual YHS case competition.

In this Q&A session, Alec describes his YHS experience, highlights, presentation and advice for future students interested in the competition.

Describe your YHS experience.

The Young Hospitality Summit was truly a deeply enriching experience for me. I had the absolute pleasure of meeting many motivated, engaged and like-minded students from around the world while listening to some of the top trailblazers in the hospitality industry speak on groundbreaking topics. I also had the opportunity to collaborate with my fellow delegates to present a revolutionary idea to a panel of judges from NEOM.

What was your presentation about?

My presentation was about how artificial intelligence could be applied to reduce food waste in hotels. The biggest cause of food waste in the industry is excess supply going bad before it reaches the consumer. My group believed that by utilizing machine learning and creating a consumer database we could offer guests a personalized food experience while matching food supply with food demand thus reducing food waste in the operation.

What was the highlight of the Young Hospitality Summit?

The standout from the Young Hospitality Summit for me was the focus on challenging the future of hotels. My whole view of AI was redefined when I got to listen to Tatiana Labaki from NEOM speak regarding the integration of tech into the hotel industry. I learned so much about how artificial intelligence can cooperate with the human touch instead of replacing it. Also, I learned the importance of always questioning every aspect of the operation. Tatiana questioned why hotels had a fixed layout and explained how AI could lead to personalized hotel spaces for each guest. This incredibly cool idea taught me the valuable lesson of challenging my expectations every step of the way.

Do you have any advice for students considering this competition in the future?

My advice for any student considering attending YHS is to do it and take the leap. Go in with an open mind but ensure that you critically think about each idea you hear. As well, step out of your comfort zone and make sure to speak to as many panelists as possible. They won't know you if you're just another face in the crowd, introduce yourself and build your network.

If you're looking for a FINE DINING experience in DC I would highly recommend their 14-course tasting menu-- worth every penny. Not only is the service a worldly experience of its own but the food which is inspired by South American cultural roots, is a symphony of flavors that delights the senses with each course telling a story from its respective country. Date of the meal: 2/22/24 We went to Mita to celebrate a birthday and it exceeded expectations. We went for the full tasting experience menu supplemented with cocktails and wine. The food is as delicious as it is aesthetically stimulating. Our favorite dish was easily the ARRACACHA - FAVABEANS - SWEET PLANTAIN - DASHI. The vibe/ambiance is very comfortable, a perfect balance of upscale fancy feels with laid back casual. If you can get a seat at the counter I recommend it as it will elevate your experience even more to watch many of the dishes being prepared. I to my cap to Monica who was skilled enough to chat with us through the experience all while preparing more than a third of the dishes on the menu (there are 14 total not including one bonus dessert item) at an impressive pace. As an open fire BBQ enthusiast and meat-eater I enjoyed this experience more than other 1-star Michelin rated establishments I have dined in which might shock some people who know me. I would be surprised if MITA did not have one or two stars of their own very soon. I will likely go back.

My boyfriend and I loved going to Mita when they were a pop-up restaurant at La Cosecha, so we were happy when they opened a free-standing location on V Street, just down the block from 9:30 Club. However, this is not a place to go if you have plans. Mita is an experience in itself. If you include the two amuses bouches and final bonbon, there are fourteen courses in which vegetables, fruits, grains, beans, and nuts take center stage. While there are a few items that made their way from their old location (the dish made of charred banana, pearled barley, and seared maitake was very familiar, as was the watermelon crudo), I was glad to enjoy new tastes, such as the arepa platter, featuring five different types of arepas with three beautiful dips. Some of the dishes feature ingredients you probably won't be able to get anywhere else north of the Mexico-Guatemala border. Many of the dishes come with stories, and I do wish the little menu we got at the end included it so I could remember the importance of the offering box that held our fourth course, a yuba, black bean mole, and celery root bite. I also wish there were more non-alcoholic drinks (or cocktails that could be made zero-proof). I'm told Mita will likely change its menu seasonally, so I'll be sure to go in a few weeks when that happens. This is definitely a splurge/special occasion restaurant, but well worth it.

The place is basic looking but there is a nice cute bar area. The service is on point and very attentive. The food was amazing! Everything is vegetarian. There was one item that was a candy looking item that was wrapped, everything of that is edible and delicious. The only item I wasn't a fan of was the one that was made with banana because the banana taste overpowered the rest of it. This place is totally worth it for special occasions.

This was a spontaneous restaurant week outing and I'm so glad I made it! The food was unlike anything I've ever had--the arracacha soup was like eating a cloud in the best possible way! We also splurged and got the area add on which were served with delicious dips. Well worth the extra cost. Their wine selection was spectacular and included a rare yet affordable Sicilian wine which I thoroughly enjoyed. Servers were very attentive and friendly. All were very helpful in describing the flavors in each dish and really helped us enjoy the food experience more. The ambiance was very nice and relaxed. I can't wait to come back!

10/10 (you won't miss meat!) MITA is an amazing restaurant where you will taste the love and passion in the creative food. Service is all around perfect and they have a knowledgeable somm on staff if you want to enjoy wine. Friends invited me to join them for the tasting menu (14 courses- which sounds like a lot, but you leave feeling more than satisfied and not overly full). The atmosphere is lively but not loud 20. Lots of thoughtful touches throughout the meal. I wont show all the photos as you need to be tempted to try it for yourself :-)

Amazing experience at Mita. From the first amuse bouche to the final bonbon every course was an explosion of flavor and a celebration of Latin American ingredients and flavors. Both our cocktails were phenomenal, and the wine menu provided a range of options for every palette and price point. Service was exceptional and approachable, and the entire front of house was well versed on the menu. The experience felt cozy and intimate, but I expect that the space gets quite loud with a full house. We look flowers to returning in the summer!

'The Barbie Music Festival Exhibition'

Looking for a family-friendly activity this weekend that doesn't require a Coachella wristband, but still leans into the festival spirit? The Body Deli on El Paseo invites you to experience its unique exhibit of vintage Barbie dolls on display amidst a colorful festive atmosphere. The exhibit includes a giant Ferris wheel (like the one at Empire Polo Club during the festivals), a rainbow tower (just like "Spectra" on the festival grounds), and even a stage with a Taylor Swift doll singing as this festival’s headliner (something we've yet to see at the festival in real life, but you never know). With 32 Barbie and Ken dolls, the dazzling display was orchestrated by Margaret Clark, co-founder of The Body Deli, from her 60+ years of collecting Barbie dolls.

Desert Theatreworks presents 'To Kill a Mockingbird'

Harper Lee's beloved Pulitzer Prize-winning book "To Kill a Mockingbird" comes to life in this play, which opens on a sleepy Alabama town in the midst of the Great Depression. Main character Scout and her brother, Jem, live here with their widowed father, Atticus Finch. The facade of the seemingly peaceful town begins to crack when a young Black man is accused of a terrible crime. Driven by an unshakeable moral conviction, local lawyer Atticus defends the man in a trial that sends violent waves through the community. All these years later, this work remains a powerful tale about racism, compassion and the difference between right and wrong.

Revolution Stage Company presents 'The 25th Annual Putnam County Spelling Bee'

Head to Revolution Stage Company to hear this beloved tale about an eclectic group of sixth-graders at the 25th Annual Putnam County Spelling Bee, each eager to win for very different reasons. This hysterical and catchy musical follows each speller as they reveal their hopes, struggles and passions throughout the competition. With an engaging score by William Finn and a sweet book by Rachel Sheinkin, "The 25th Annual Putnam County Spelling Bee" causes audiences to fall in love with this group of young people.

The Bent presents 'The Lincoln Debate'

"The Lincoln Debate," the popular play by local theater artist Terry Ray that launched The Bent theater last year, is back. The world premiere garnered rave reviews, and was nominated for seven Desert Theater League Awards, including Best Comedy and Best Director. Only seen by Palm Springs audiences, this show explores the four years that Abraham Lincoln shared a bed with a man that history records as his “best friend.” Was it more than just a friendship? After hearing the facts, you decide for yourself. Jason Reale and Alex Price return to their award-winning roles as Lincoln and his bedmate, and the show also stars Ray, Angela Landis and Amber Lux Archer. Steve Rosenbaum once again directs.

The River Spring Music Series

The spring concert series presented by the City of Rancho Mirage Cultural Commission ends this Saturday, so prepare to kick your night off with live music. This week, Radio Ready is back to groove to the exhilarating tunes of yesterday and today. The set will also feature guest singers as well as the High Hopes Dance Troupe (all disabilities dance troupe). Guests also have the chance to win prizes from local businesses such as The Ritz Carlton, The Omni Rancho Mirage, Acrisure Arena (VIP tickets to a Firebirds game) and more by entering our raffle. All of the proceeds from the raffle, hosted by the Rotary Club of Palm Desert, go to Fenixia Foundation, a local nonprofit supporting autism and disability acceptance. A check presentation to Fenixia Foundation will follow the raffle winners announcement.

When:  6-8 p.m. Saturday, April 27

Where:  The River Amphitheatre, 71-800 Highway 111, Rancho Mirage

Cost:  Admission to the concert is free, but raffle tickets will be sold during the band performances, and all guests are encouraged to purchase one. Each ticket is $5, or you can purchase five tickets for $20. Tickets can be purchased until 7:30 p.m. April 29.

Molly Haskell book talk and "The Palm Beach Story" presentation

Legendary film critic and author Molly Haskell will be making a rare West Coast appearance in Palm Springs this weekend to speak on classic films and sign her books. Haskell is the author of six books, including "From Reverence To Rape, the Treatment of Women in the Movies," cited by The Hollywood Reporter as one of the most influential film books of all time. She's written for The New York Times, The Guardian UK, Esquire, The Village Voice, New York Magazine, Vogue and many more publications. She has also served as an associate professor of film at Barnard, and as adjunct professor of film at Columbia University. Haskell will speak and sign books at the April 27 screening of "The Palm Beach Story" starring Claudette Colbert, and the April 28 screening of "Design for Living" starring Gary Cooper at the Camelot Theater.
